One Ripe Bell Pepper

This one pepper has been looking quite ripe for a while now. I have been unsure how long to leave it on the plant once it has taken its full colour. Do peppers increase in size after getting their colour? In the end I left it a couple of weeks looking like this before finally succumbing, cutting it off and serving it in a salad. Tasty! Emma
